Main Dishes(Main Course) - Cauliflower With Mint And Chilli Dressing

Cauliflower With Mint And Chilli Dressing:
Ingredients:
500g cauliflower cut into 1" florets boiled in water with 1 tsp salt until tender but crisp, 4 tbsp lime juice or to taste, 1/4 cup olive oil or good salad oil, 1 tbsp finely chopped coriander leaves,2 tbsp finely chopped mint leaves, 3-4 green chillies deseeded and finely minced, 1/2 tsp sugar, salt and pepper to season.

Method:
Drain and cool cauliflower, place in a serving dish.In a bowl, place all the other ingredients, whisk well, and season with salt and pepper.Pour over cauliflower, toss well and chill upto 2 hours for best results.However 1/2 hour will suffice before serving.
